  • A few avocados.
  • Garlic.

  • Just peel and mash avocado.

  • 2 medium vine ripe tomatoes, chopped.
  • 1 avocado, chopped.
  • 1⁄4 cup diced red onion.
  • 1 tablespoon olive oil.
  • 1 tablespoon balsamic vinegar.
  • 1 teaspoon lemon juice.
  • salt and fresh pepper.

Preparation:

  • Combine all ingredients in small bowl and toss together.
  • Let stand 5 minutes before serving.
  • dress very simply with lime juice, salt, and pepper.
  • Serves 4.





4.  Slow Cooker Avocado Lime Chicken Soup:

Ingredients:

  • 1 lb boneless, skinless chicken breasts.
  • 1 tsp, chili powder.
  • ½ tsp. ground cumin.
  • 1/2 tsp. salt.
  • 6 cups low-sodium chicken broth.
  • 1 fresh avocado, halved, pitted, peeled and chopped.
  • 1 cup  jarred salsa verde.
  • 2 scallions ,sliced on a diagonal.
  • 1/4 cup cilantro leaves.
  • 2 Tbsp, lime juice.
  • 2 Tbsp, fresh ginger minced.
  • 2 cloves garlic.

Preparation: 

  • Season chicken with chili powder, cumin and salt.
  • Place on bottom of slow cooker.
  • Add broth, salsa verde, ginger and garlic and cook in slow cooker for 3 hours on high or 6 hours on low.
  • Remove chicken from slow cooker.
  • Using two forks, shred chicken.
  • Return chicken to slow cooker and stir in avocado, scallions, cilantro and lime juice.




5. Slow Cooker Chicken Tortilla Soup:

Ingredients: 

  • 1 1/2 pounds bone-in, skin-on chicken thighs.
  • 4 cups (1 quart) low-sodium chicken broth.
  • 1 (15-ounce) can fire-roasted diced tomatoes (do not drain).
  • 1 medium yellow onion, finely chopped.
  • 2 cloves garlic, finely chopped.
  • 2 medium carrots, peeled and diced.
  • 1 1/4 teaspoons ground cumin.
  • 1/2 teaspoon chili powder.
  • 1/2 teaspoon fine salt, plus more for seasoning.
  • 1/2 teaspoon dried oregano.
  • 1/8 teaspoon cayenne pepper (optional).
  • 1 (15-ounce) can black beans, drained and rinsed.
  • Juice 1/2 medium lime.
  • Crumbled tortilla chips.
  • Serves 4 to 6.

  • Place all the ingredients in the insert of a 4-quart or larger slow cooker in an even layer.
  • Cover the slow cooker and cook until the chicken is tender and the soup is flavorful, 6 hours on low or 4 hours on high.
  • Transfer the chicken to a large plate.
  • remove and discard the skin, bones, and any cartilage.
  • Shred the chicken and add the meat back into the soup.
  • Add the black beans and lime juice and stir to combine.
  • Taste and season with salt as needed.
  • Serve the soup with crumbled tortilla chips and other toppings.





6. Another Delicious Guacamole Recipe:

Ingredients:

  • 3 ripe avocados
  • 1/4 cup chopped cilantro
  • 1/2 cup diced red or white onion
  • 2-3 jalapeno or serrano chiles, stemmed, seeded, and finely diced
  • 2-3 tablespoons fresh lime or lemon juice.
  • Salt and pepper to taste.

  • Cut the avocados in half and remove the pit.
  • Scoop out the flesh into a medium size mixing bowl.
  • Mash the avocados with a fork until chunky.
  • Add the remaining ingredients and stir well to combine.

1. Add 1/2 cup plum tomatoes, seeded and diced

Ingredients: 

  • 1 (12 ounce) can solid white tuna packed in water, drained.
  • 1 tablespoon mayonnaise.
  • 3 green onions, thinly sliced, plus additional for garnish.
  • 1/2 red bell pepper, chopped. 1 dash balsamic vinegar.
  • black pepper to taste.
  • 1 pinch garlic salt, or to taste.
  • 2 ripe avocados, halved and pitted.

  • 1/2 lime, juiced.

Preparation:

  • Combine avocado, green onion, cilantro, seasoned salt, black pepper, garlic, and lime juice in a bowl.

Ingredients:

  • 2 cups fresh spinach.
  • 1 cup diced avocado.
  • 1/2 cup reduced-fat sour cream.
  • 1/4 cup chopped red onion.
  • 1 tablespoon fresh lime juice.
  • 1 tablespoon chopped seeded jalapeno pepper.
  • 1 large garlic clove.
  • 1/2 teaspoon salt.
  • 1/8 teaspoon ground black pepper.

Preparation: 

  • Process spinach, avocado, sour cream, red onion, lime juice, jalapeno pepper, garlic, salt, black pepper, and hot sauce in a food processor until smooth.

Ingredients: 

  • 1 pound ground chicken I use Iserio brand.
  • 2 clove ‘s garlic minced.
  • 1 avocado – cut into small cubes use one on the firmer side.
  • 1/3 cup Panko crumbs or almond meal.
  • 1/2 teaspoon salt.
  • 1/4 teaspoon pepper.

Preparation:

  • Combine ground chicken, Panko crumbs or garlic, salt and pepper.
  • Gently fold in avocado chunks trying not to mash them up too much.
  • Form into 4 patties.
  • Heat grill to medium high heat.
  • Grill for about 4 minutes on each side until juices run clear.

13. Authentic Mexican Guacamole:

Ingredients:

  • 5 large Hass avocados (black in color,slightly soft to the press).
  • 2 large fresh limes juice.
  • 1 medium white onion.
  • 3⁄4 cup loosely packed fresh cilantro(chopped finely).
  • 1 large tomatoes (Diced-make sure it isn’t overly ripe).

Ingredients:

  • ½  large avocado or 1 small avocado, cut in half and pitted.
  • 6  tablespoons of olive oil.
  • ¼ cup Juice from 2 limes.
  • 1-2  jalapeño or serrano peppers, seeds and veins removed.
  • replace with green bell pepper for a non-spicy variation.
    A handful of cilantro leaves.
  • add more to taste.
  • Salt to taste.

  • Place all the ingredients for the creamy avocado dressing in a small food processor or blender.
  • Blend until the ingredients are well combined and you have a smooth dressing, taste and adjust the amount of salt/lime based on your preference.

Ingredients:

  • 9 ounces dry pasta.
  • 1 medium tomato, diced.
  • 1 green onion, finely sliced.
  • 1 large ripe avocado.
  • 1/4 teaspoon finely grated garlic.
  • Juice from 1/4 of a lemon.
  • Salt and fresh ground pepper, to taste.

  • Bring a pot of salted water to the boil and cook pasta.
  • Once cooked, reserve 1/2 cup of hot pasta water then drain pasta.
  • Mash avocado in a large bowl.
  • Stir in the garlic and lemon juice then season with salt and pepper, to taste.
  • Stir in a 1/4-cup of the reserved pasta water.
  • Add pasta, tomatoes, and green onion then toss until the pasta is completely coated by the sauce.
